Vineyard and Vintage Notes:
Les Crais is a site within Gevrey Chambertin that is situated in the lower plain. The vines are on average 35 years old and even very deep roots, they struggled towards the end of what was an exceptionally hot and dry season. Some drought stress caused the grapes to dehydrate, which benefitted the wine with very rich ripe raison character. 2005 will go down as an exceptional vintage in Gevrey Chambertin.

Fermentation and Ageing:
The grapes were handpicked and transported by refrigerated truck to the winery. There we sorted, crushed and destemmed the fruit and transferred the must to tanks by gravity. About 15% of the harvest was not crushed and was put into fermenter as whole berries. After a six day cold soak we started the fermentation that lasted three weeks. After pressing, the wine was aged in oak - 30% being new barrels - for 11 months. This wine was bottled without any filtration.

Tasting notes:
This Gevrey Chambertin has all the classic elements that make this one of Burgundy's most sought after appellations. The nose is filled with currants and berries, but also exhibits the distinctive earthy notes that are well recognized in classic Gevrey Chambertin. Rich soft velvety tannins are backed by nice structure and depth that will help age this wine for many years to come.
