Vineyard and Vintage notes:
Les Chaponnières is a small Clos tucked in behind the center of Pommard. This small premier cru is made up of mostly old vines with a heavy concentration of limestone. With its easterly exposure and enclosure by a stone wall, this is a consistenly warm site, witch produces very ripe fruit. In 2005 the hot and dry conditions made for some very rich and intense Pinot Noir, with abundant, but ripe tannins.

Fermentation and Aging :
The grapes were handpicked and transfered by refrigerated truck to the winery. There we sorted, crushed and destemmed the fruit and transfered the must to tanks by gravity. About 15% of the harvest was not crushed and was put into the fermenter as whole berries, to increase the fruit intensity. After a six days cold soak we started the fermentation that lasted three weeks. After pressing, the wine was aged in oak, 40% being new barrels, for 14 months. This wine was bottled without any filtration.

Tasting notes:
A true 1° Cru Pommard, this wine has a deep concentrationof fruit that is hightlighted by black currants, black cherry and spice. There is great balance and depht which gives this wine a lot of volume. The big tannic structure exemplifies this appellation and will help this wine age for many years to come.
