Vineyard and Vintage :
Les Santenots lies on the southern edge of Volnay (technically in Meursault) and is considered one of the most prestigeous sites in Volnay. With an average vine age of around fifty years, these are low yielding vines that produce very intense Pinot Noir flavors. In 2005, a great year in Volnay, the hot dry conditions allowed Les Santenots to ripen gently and evenly to a perfect maturity.

Fermentation and Aging :
The grapes were handpicked and transported by refrigerated truck to the winery. There we sorted, crushed and destemmed the fruit and transfered the must to tanks by gravity.About 15% of the harvest was not crushed and was put into the fermenter as whole berries. After a six days cold soak we started the fermentation that lasted three weeks. After pressing, the wine was aged in oak -40% being new barrels- for 14 months. This wine was bottled without any filtration.

Tasting notes:
|
Les Santenots along with most 1° cru Volnay show more grace and elegance than it's neighboor Pommard to the north. This wine has bright red fruit that show some raspberry and cherry notes as well as is a slight edge of currents. On the palate, firm tannins and bright acidity add to this well concentrated Pinot Noir. The out come is elegance, but there is just enough power to make this a wine will develop over time.
